Getting started / temporary compost

What's a good way to get started with composting? We're on a new property that's mostly wooded. Our building is temporary (Camper) while we level the land and get the basement in. We grill outside and have a decent amount of food scraps and charcoal ash, but no lawn clippings. We can throw in dead leaves, sticks, coffee grounds and such. I wouldn't be looking for anything permanent until we got the hang of things. Can you just heap things into a pile and stir them from time to time?

Found a place to start composting. We would toss plant food scraps, coffee grounds and leaves in a pile and turn them. The pile started shrinking quickly with no noticeable amount of dirt being formed. We found the reason tonight when a rather fat racoon was leaving the pile. Apparently it turned into an all-you-can-stomach buffet for the local wildlife. I think next time we may try a barrel or three sided bin and mix it in with dirt to make it less paletable.
